Rena Graver, chief operating officer of Balcony Restaurant Group, oversees six restaurants in Georgia and Alabama from the group's Dallas, Texas office. That means she has to feel comfortable that each location's data is safe and secure from hundreds of miles away. "Like any business, restaurants are very much tied to their computers and digital information. The difference is, the restaurant business can't stop just because computers are down," she says. "And we don't close on weekends, so there's not a lot of down time to spend fixing computers."
Although the company's main point-of-sale systems were backed up, managers, operations directors, and catering specialists had laptops with no formal backup policies.
